1 tsp kosher salt
4 eggs, lightly beaten

½ cup chopped onion
½ cup vegetable oil
½ cup grated Parmesan cheese
½ cup grated cheddar cheese
½ tsp black pepper
(You can also add tomatoes and peppers, if available)
DIRECTIONS
Whisk together the “quick” baking mix, vegetable oil, eggs, salt, and pepper
Add cheeses.
Add zucchini and onion.
Pour into greased dish. (suggestion use a round glass pie pan.)
Bake at 350 degrees for 40-45 min.
